I love Blackberries. I decided to make a Oatmeal crusted blackberry pie this week.My favorite part about it was the sauce.
I used some pinot noir and lemon juice to bring the berries into a sophisticated tasting delight. I want to make them into bars the next time I have a chance to make it.

Busy Baker
I have been busy baking but not in my own kitchen. I have been working more hours at the Dean and Deluca Bakery. No school and prepare you for the mass production and hard work that it takes to run a bakery. I've been enjoying my time crunch days.I appreciate all that goes into it.I'm so happy to have the opportunity to learn hands on. There are days that the pressure gets to you especially when you are use to your own recipes and time table. But what doesn't kill you makes you stronger and if you learn from every mistake you will get better!

Low fat yumminess
Yes these are low fat and I think they are so good! I'm addicted to sweets but I really need to watch how much I consume. With not eating something sweet everyday OUT OF THE QUESTION!!! I need to make alternative for myself. More exercise and some modifications to my food intake.I came across this recipe for low fat brownies.
Low Fat brownies "my version"
1/2c. Flour {I use all natural wheat flour}
1/2 sugar
1/2c. Cocoa powder
1/2 tsp.Baking powder
1/4 tsp. fine sea salt
1/2 tsp. Espresso powder
Shift and set aside
mix
4oz. applesauce
2 Tbsp. Canola Oil
2Tsp. Vanilla
2 egg whites
and 1 beaten egg
mix all together {I add in 1 C. Chocolate chips :)}
Bake 350 for 20-25 min.
They don't really rise so I used a swallow small pan.
10 minutes out the oven and I topped it with 1/2 fat ice cream and drizzled a raspberry chocolate sauce.
Red velvet
Yes this is box cake and I have done this before with devil's food box cake but it works with Red velvet too.
Simply add 15 oz of canned pumpkin puree to the dry cake and pop in the oven!bake the same as a regular cake. I topped it with chocolate chips and then baked!

Dog and Jog
Well Surewest is sponsoring the Dog and Jog event this Sunday on the Plaza. I was asked to do some cookies. I did their logo very simple and dog bone cookies! I'm glad they are part of a good fundraiser!

Lemon/Nibs
I Love citrus cookies and have a few favorites that I make but I'm always looking for new twists I modified a honey lemon cookie recipe and was super happy they are really soft not too sweet and refreshing!
There are tons of recipes to try.These will be around my kitchen at all times!

Vanilla Bean Cake
While in Sonoma County we picked up a great Conserve Asian Pear, Blackberry and LavenderI thought that it would add a great fresh flavor to the cake. Iced with a vanilla bean whipped cream frosting , topped with fresh blackberries served with a scoop of poached pear sorbet.
This was a summer hit!
