Key lime and Coconut Macaroon

Well I'm a week behind on my school production updates. But last week amd the week before I was working on Key lime tarts and Coconut macaroons along with chantilly cream and short dough.

I made an 12" and 4" tarts. I also asked if I could do a lemon meringue version and was told reluctantly yes. I loved the lemon curd but not the meringue.:(

The coconut macaroons were also great with a drizzle of prima chocolate..YUM.



On Chef Flick's work load 450 pieces of mini desserts like petite fours, cream puffs and tarts. Of course it takes him no time at all to put together...that is why I want to learn from him,even if he drives me crazy sometimes ;)

This week I'm working on many things at School~ Flourless chocolate cake and mini's,cream horns and brioche. Personally~ I'm working on my cousin's ten year wedding renewal, picking up one too many shifts at D and D and making gift baskets....so I'll have more work to share on my crazy train of desserts....and hopefully some recipes to share

Apple of my eye



Yes that's me being caught in the act....... eating a most wonderful Apple donut, hot out the oil from an apple farm in Weston, Missouri. This is one of my favorite spots in the fall. My love of desserts has me all over the place trying one of everything!

We had fun picking pumpkins and drinking apple cider. Every year I look for a new pumpkin "find" last year it was pumpkin fudge this year pumpkin soap. Even though It's not edible is still pumperific...

I guess I shouldn't start talking too much about pumpkins {again...or just yet..more pumpkin desserts to come :)} Back to the apples. I love all the beautiful apples and how good apples are in the dessert.


Of course I had to get a French Apple pie and it was really good not sure as good as Apple Hill's in California........... but the thick brown sugar and cinnamon paste in between the thin layers of apple was Delicious!

An honest Oatmeal cookie

What is an honest oatmeal cookie? It is made with all oats no flour. I was watching Alton Brown and he was making these and I just had to try it! I think it's a great cookie and worth making.
Start by toasting 16 ounces of rolled oats. 350 for 20min on a sheet pan.
Take 8 ounces of the oats a food process to a fine powder...add 1 tsp of cinnamon, 1 tsp of baking powder and a pinch of kosher salt.

In a mixer cream 10 ounces of room temp butter with 3 1/2 ounces of sugar and 6 ounces of brown sugar. ***{out of brown sugar? Just mix regular sugar and molasses or pure maple syrup in a mixer until you have the desired brown you want..it's that simple.... }
Cream until smooth.
add 1 tsp of vanilla and 1 lrg. egg
add all your oat flour mix combine until most of flour is gone {not all} add the remaining 8 ounces of whole oats and optional garnish I used 12 ounces butterscotch chips but use anything {raisins, chocolate chips,etc...}
scoop and refrigerate for an hour to slow spread. Enjoy!

Falling in love with a pumpkin..again

Fall is here and I'm loving it! I think this year in Kansas is going to be great {last year was a shame}. So of course It's all about PUMPKIN!!! I started with my new pan from CSN ! Their company is amazing they have so many products. My next purchase is going to be cream horn molds!
I made these little pumpkin muffin cakes.

Here's the recipe
preheat 375

cakes/muffins

Sift
1 1/2 c. Flour
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
1/4 tsp salt

whisk
2 eggs
1/3 cup brown sugar
until smooth
mix in 16 ounces of pure pumpkin puree and 1/4 cup melted butter

once blended add all your dry ingredients mix just until it's dissolved{don't over mix}.
pour in to pan and bake 20-25 minutes.

Cream Glaze
2 ounces of soft cream cheese
1 Tbsp butter softened
1 cup sifted powder sugar
1/4 tsp. vanilla
1-3 Tbsp milk


One of my favorite things is toasted salted pecans. They add the best texture and flavor to any fall treat..

That same morning I made my sister a pumpkin muffin {with cream cheese in the batter},My beautiful 3 year old nephew had to be hospitalized and under go multiple surgeries for a horrible case of strep pneumonia. My mom was catching a plane and I wanted her to bring my sister a fresh baked treat from me.Wish I could of delivered it myself..

Baking something for the ones you love is what makes it a labor of love. I hope they enjoyed a piece of homemade while they are in the hospital. My love always...

Spiced Carrot Glace

Yes..it was amazing! Christopher Elbow you have done it again. His Glace is one of my favorite ice cream. It happened almost accidentally..... My really good friend Staci came to visit from California so of course we had to take her to all the fabulous eating spots here in Kansas City.
One of the places was Spin! pizza close to the plaza and what was right next door...Glace! We sell some of his flavors at Dean and Deluca but he has endless amounts of unique flavors like sweet corn, salty pretzel, pineapple cilantro sorbet.. just to name a few. There seasonal on was spiced carrot! It tastes really close to pumpkin.... which if you know me I practically turn orange in the fall from all the pumpkin treats I make and find to eat! I got cream cheese to compliment it..oh yeah.

I swore up and down that I would not finish the whole thing...I was soo wrong! licked it clean!
I feel my pumpkin craze coming on even if it started with a carrot.
